Herbs de Provence Lavish Crackers
These luxurious crackers are the perfect accompaniment to any farm cheese board. You’ll need a pasta roller to make these! We use this one.

Ingredients
1 cup of King Arthur Flour
2 Tablespoons of Herbs de Provence
1 teaspoon of lavender salt
1/4 cup of good olive oil
1/4 cup of warm water

Combine all ingredients in your mixer with a dough hook. Knead on low for 5 minutes, allowing the gluten to form and the dough to become soft and very pliable. If the dough is sticky, add a sprinkle of flour, if too dry, add an additional one teaspoon of water at a time.

Once the dough is done, pinch into small pieces (about the size of a small lime), and move through the pasta roller, starting at level one, and working your way up to level four, to create a very thin sheet of dough. Lay crackers on a parchment-lined sheet pan and bake at 350 for 15 minutes. Keep a very close eye on them, being careful not to burn them. When done, crackers should SNAP in half, audibly. If they bend and don’t snap, they’re not quite done yet!

Do not worry if crackers get a little brown, they’ll just develop a delightful nutty flavor.

Let baked crackers cool and then store in an airtight container for one week.
