Small Batch Cucumber Gin Cocktail

We love a fresh cocktail, straight from our kitchen garden. Whip this snazzy drink up, and serve it in a coupe glass with a sprig of fresh lavender. This recipe makes enough for six.

Ingredients

1/2 cup of cucumber juice | we use one organic English cucumber (peeled and blitzed in the food processor or blender, then triple strained!)

1/2 cup of fresh organic Meyer lemon juice

1/4 cup of Lavender Syrup

1/2 cup of Gin

Method

Combine all ingredients in a large cocktail shaker with a cup of ice. Give it a good shake

Pour into lavender sugar-rimmed coupe glasses, (use thinned Lavender Syrup to wet the rim, and use the sifted Lavender Sugar).

Garnish with a fresh lavender sprig and enjoy!
